Balsamic Dijon Provencal Marinade

1/3 cup extra virgin olive oil

5 tbsp balsamic vinegar

1 clove garlic, minced

3 tbsp fresh lemon juice

2 tbsp sugar 

2 tbsp Dijon-style mustard

4 tsp herbs de provence

salt and pepper to taste

Combine all ingredients in a bowl, whisk to combine


Lemon Honey Thyme Marinade

1/2 c honey 

½ c lemon juice

1/4 c extra virgin olive oil

3 tbsp fresh thyme leaves

1 tbsp Dijon-style mustard

1/2 tsp sea salt 

½ tsp crushed red pepper flakes

Combine all ingredients in a small saucepan over medium heat. Bring to a light simmer. Remove from heat immediately. Set aside to cool. Pour over meat and let marinate. Reserve ¼ of the marinade to brush on meat before serving

Mint Chimichurri Marinade

6 medium cloves of garlic

2 medium shallots, rough chop

2 cups fresh mint leaves

1/2 c fresh parsley

1 tsp sea salt

2 tsp red pepper sauce

1/2 c red wine vinegar

3/4 c extra virgin olive oil

Place all ingredients in a  food processor. Pulse several times to mince and blend


Preparing your Meat Tips: Marinades and Rubs are most flavorful when meat can marinate for at least 4 hours - overnight. When using frozen meat, please give it time to thaw. Overnight in the fridge is the best option. DO NOT microwave meat. Make sure meat is at room temperature before cooking.

Spice Rubs

Dried Porcini Mushroom Rub

1/3 cup porcini powder

1/4 cup sea salt 

1/4 cup sugar

1/4 cup balsamic vinegar

1 tbsp black pepper

1 tbsp dried rosemary

1 ½  tsp crushed red pepper flakes

(If porcini powder is not available, purchase dried porcini mushrooms and make your own powder using a food processor or grinder)

Combine all ingredients in a bowl, whisk to combine

Fresh Herb Parmesan Rub

3/4 cup grated parmesan cheese

1/2 cup bread crumbs

1/2 cup fresh parsley 

1/2 cup fresh basil leaves

1/4 cup fresh tarragon

1 tbsp each fresh thyme

 1 tbsp fresh rosemary

1 tbsp garlic powder

Place all ingredients in a food processor and pulse until thoroughly combined


Moroccan Rub

2 tbsp sugar

1 tbsp ground cumin

2 tsp ground turmeric

1 tsp sweet paprika

1/2 tsp cinnamon

1/2 tsp garlic powder 

1/2 tsp ground coriander

1/2 tsp crushed chiles

1/4 tsp ground cloves

Combine all ingredients in a bowl. Whisk  until thoroughly combined
